Will the text stay selectable?
When possible, yes. If only the file's structure is broken, it's re-saved losslessly with your vector text intact. If the file is badly damaged, it's rebuilt from page images — still readable, but without selectable text.
Can every file be repaired?
No. If a file is damaged so badly it can't be read at all, it can't be recovered. Always try to keep a known-good original.
